Heberals (hapšâw'l: hêberal têmâŵ - port's kitchen) are a type of restaurant common in urban Hapšâw. They serve meals which are quick and simple to prepare, mostly consisting of pan-fried or grilled food.
Description
Heberals typically take the form of a small shack, with seating arranged outside of it. It's common for umbrellas or tents to be set up to protect the clients from rain or to create shade. Between 3 and 8 people will typically work at a heberal, depending on the size; one or two will typically serve as cashiers, taking orders and payment, while the rest work on preparing the food. No waiters are present, the food is ordered at a counter and clients are expected to pick it up themselves, usually receiving a number after ordering.
The menu typically consists of fried fish or meat, typically being served in small sections and eaten with hands, the fish may be breaded or served with sauce. most heberals also serve a form of hash browns made from repera, as well as crustaceans, or more rarely, steamed oysters or clams. Croutons are ubiquitous as a side to the meal, and fruit wine (either warm or cooled, depending on the season) is typically available as a drink.
History
Although their spread is recent, heberals have existed on the island for a long time, the first mention dating back to 70 TT. As their name suggests, the restaurants were originally found in ports, where sailors, often returning from long stretches of fishing, or lenghty travel, wanted to enjoy a hot meal as quick as possible. Due to the increasing industrialization of the halnas a large part of the population now works in shifts with short breaks, making quickly served meals similarly appealing to them, which has caused heberals to become very popular in recent years.
