Leikeqaai (Łaakehau'a: Moon, lit. the face of night, pronounced /ləi̯.cə.kǂaːi) is a type of flatbread eaten by inhabitants of Mpaikewuu’akehau’a.

Ingredients

- nuts of the 'Aitun bush

- eggs

Preparation

The nuts are ground into a powder and then dried, becoming a form of flour. Another portion of the nuts is ground into a paste and then extracted into nut oil.

The oil, flour and eggs are mixed, forming the dough of the flatbread.

The dough is thinly spread atop a raised surface made from clay, under which a fire is lit.

The dough is then cooked, then flipped and cooked again.
