Gordo typically refers to the large, blue fruit that grows from the vine of the same name. It has a soft, fleshy interior but a hard, almost nut-like exterior that must be sawed into or cracked in a press before use. For this reason, it is primarily sold in half pieces with the exposed interior sealed in a food-safe wax.
